With all the hustle of preparing a huge Thanksgiving Dinner we often forget to fill our bellies in the morning so they can handle all that delicious home cooking for dinner.
A Holiday tradition in our home is Pumpkin Pecan Pancakes Thanksgiving Morning with all the simple ingredients your sure to have on hand they are a sweet spicy way to wake up Thanksgiving morning. Give them a try they'll soon be a tradition in your home too.
Maple-Pecan Syrup
- 1
- cup REAL pure maple syrup or you can use the sugary fake stuff
- 1
- tablespoon butter
- 1/4
- cup chopped pecans
- Pinch of Orange Zest
- Juice 1/4 Orange
Pancakes
- 2 1/3
- cups Pancake mix Bisquick or any I use Pamela's Gluten Free mix
- 1/3
- cup canned pumpkin (not pumpkin pie mix)
- 1 1/4
- cups milk
- 1/4
- cup vegetable oil
- 2
- tablespoons sugar
- 1
- teaspoon pumpkin pie spice
- 2
- eggs
You can also add mini Chocolate chips for some chocolate goodness.
- 1In 1-quart saucepan, heat syrup and butter until butter is melted, stirring constantly. Remove from heat; stir in pecans, Orange juice and zest.
- 2Heat griddle or skillet over medium heat. In medium bowl, stir all pancake ingredients until well blended. For each pancake, pour a small 1/4 cup batter onto hot griddle.
- 3Cook until edges are cooked. Turn; cook other sides until golden. Serve with syrup yummy yummy...
