Oven roasted Garlic and Lemon Artichokes are sure a fun way to jazz up your steamed Artichoke. Here is what I do:
Cut off tips and the stem
Fan leaves out
You will need:
2 Artichokes
3 TBSP Olive Oil
1/2 Cup Veggie stock
1/2 a lemon
3 lrg Garlic Cloves
Onion Powder
Garlic Salt
Garlic and Lemon Infused Artichokes

Directions for two Artichokes:
Preheat oven to 375 Cut stems and points of the Artichokes as shown above
Fan leaves of Artichokes out
Lay out two pieces of tin foil and set one Artichoke on top of each piece

Drizzle olive oil over the top of the two Artichokes I used lemon Olive oil for an extra kick
3 lrg Garlic cloves chopped (or more as I usually do)
Squeeze half a lemon over the two artichokes
Add Veggie stock inside the Artichokes about 1/2 cup if you don't have any it's great without

Sprinkle with onion powder and garlic salt
Cover with foil
Bake at 357 degrees for 45-55 mins.
Uncover and serve on plate
Side note...I also love to dip my artichoke in melted butter mixed with Garlic Salt to taste or you can mix minced garlic, small pinch of chopped parsley and garlic salt and with a sour cream to make a great dip.
