Pumpkin Pecan Pancakes


With all the hustle of preparing a huge Thanksgiving Dinner we often forget to fill our bellies in the morning so they can handle all that delicious home cooking for dinner. 

A Holiday tradition in our home is Pumpkin Pecan Pancakes Thanksgiving Morning with all the simple ingredients your sure to have on hand they are a sweet spicy way to wake up Thanksgiving morning. Give them a try they'll soon be a tradition in your home too.




Maple-Pecan Syrup
1
cup REAL pure maple syrup or you can use the sugary fake stuff

tablespoon butter
1/4
cup chopped pecans
Pinch of Orange Zest
Juice 1/4 Orange

Pancakes
2 1/3
cups Pancake mix Bisquick or any I use Pamela's Gluten Free mix
1/3
cup canned pumpkin (not pumpkin pie mix)
1 1/4
cups milk
1/4
cup vegetable oil
2
tablespoons sugar
1
teaspoon pumpkin pie spice
2
eggs
You can also add mini Chocolate chips for some chocolate goodness.



  • 1In 1-quart saucepan, heat syrup and butter until butter is melted, stirring constantly. Remove from heat; stir in pecans, Orange juice and zest.
  • 2Heat griddle or skillet over medium heat. In medium bowl, stir all pancake ingredients until well blended. For each pancake, pour a small 1/4 cup batter onto hot griddle. 
  • 3Cook until edges are cooked. Turn; cook other sides until golden. Serve with syrup yummy yummy...
