Baby Beets

I have always been a fan of growing Beets here in Utah they just grow so easy! This year I grew from seed Renee's Garden her Exclusive Jewel Toned Blend and they are LOVELY!  A blend of burgundy Red Sangria, Golden and candy-striped Chioggia beets. They have been high yields with a sweet earthy flavor and rich glowing colors! I LOVE oven roasted beets and the greens on tops are great too give them a try. 






Oven Roasted Baby Beets
Baby Beets
Olive Oil

Preheat oven to 350 clean Beets and cut off the Greens set aside for later. Toss Beets in Olive oil just to coat place on a cookie sheet with tin foil for easier clean up. Roast beets for 45-1:30 depending on size and time of year. I roasted my Summer Baby beets for 50 mins last night and they were perfect. Take beets out of oven let cool and pull skins off slice and serve with butter, Salt and Pepper. 
 So easy to add to a summer salad with feta cheese delicious!


Easy Beet Greens with Summer Veggies
Beet Greens cut into 2 inch pieces
Any Summer Veggies you have on hand
2 Garlic cloves chopped
Red Pepper Flakes to taste
S&P
1/2 Onion chopped
2 TBSP EVOO

Add Olive Oil to pan and saute Onion, chopped Garlic and Red pepper flakes 30 seconds. Add Beet greens with whatever extra veggies you have on hand last night I sauté them with onion, Portable Mushrooms, green and yellow Zucchini yumm yumm! So many great posibilties. Stir till wilted and tender. Add Salt and Pepper to taste.

I love beets. I haven't tried growing them in my garden yet, but just a few days ago my mom gave me a big bunch from her garden. I will try roasting them.
